Suggest a better descriptionBlanch or saute favorite veggies then spread out on a large platter so not to over cook. If using tomatoes or peas, don't cook, just stir into hot pasta with the sauce.
Saute garlic and shallot in butter on med-low heat for 1-2 minutes. Don't brown garlic. Add stock, lemon zest, and lemon juice, simmer until reduced by half. Add cream and continue to simmer until thickened. Season with salt and pepper to taste.
Cook pasta and strain into a large bowl. Add vegetables and 1/2 cup grated parmesan cheese. Pour sauce over pasta, mix, and serve.
NOTE: Would also be good to add cooked shrimp or flaked salmon.
