A great sallad with a side of Tzatziki
Pasta Sallad - cook the pasta. Slice the zucchini in cubes and add to the pasta water the final 30 seconds of cooking. Slice the salmon in 3 cm cubes. Sprinkle with salt and pepper, and fry in a pan (with oil) over medium-high heat for about 6 minutes. Rinse the ruccola and drain. Slice the leek. Dice the red pepper. Slice the tomatoes in sections, then slice these in half. Slice 1/2 cucumber in 1 cm half-circles. Mix the vegetables, pasta, salmon, and the thawed mango in a big bowl.
Tzatziki - Grate 1/2 cucumber and squeeze out excess water. Finely dice 1/2 - 1 red chili. Blend cucumber, chili, yogurt and a pressed garlic clove.
Serve sallad with tsatziki.
