Bacon & onion in a garlicky tomato sauce, topped with mozzarella
Fry bacon in olive or vegetable oil, add chopped onion and soften slightly. Add garlic and a splash of balsamic vinegar. Add 2 tins of chopped tomatoes, season with salt, pepper and sugar. Simmer for 15-20 minutes to allow flavour to develop, whilst simmering cook spaghetti. Serve spaghetti onto plate, top with generous amount of sauce and sprinkle mozzarella on the top to melt into the sauce. Serve with rocket salad and crusty bread.
