Another fall favorite of mine. This creamy pumpkin sauce is delicious! Red pepper flakes and fresh basil really make the flavors pop. Serve with a light green salad.
1. Cook pasta according to package instructions.
2. Meanwhile, in a double boiler, melt 1 tablespoon of butter. Add the garlic and cook 1 minute.
3. Add the remaining butter and stir until melted.
4. Whisk in the pumpkin.
5. Stir in the red pepper, nutmeg and black pepper.
6. Stir in 3/4 cup of the parmesan cheese, adding hot pasta water to thin the sauce to your liking. (A whisk works best for stirring and combining the ingredients.)
7. Add salt to taste.
8. Remove the sauce from heat and stir in the basil.
9. Combine the drained pasta with the pumpkin sauce.
10. Top with the remaining cheese, and basil if you like.
