Making the pastry
o Add butter and water to a large saucepan and bring to boiling point
o Remove from the heat
o Sift in (through a sieve) all of the flour and salt into the saucepan
o Combine mixture with a spoon to form a pastry
o Move the pastry onto a work surface with flour
o Knead the dough into a ball
o Place the dough in a bowl and cover with cling film.
o Leave in the fridge for at least 30 mins.
o This is a good time to make your filling.
Making the pasty
o Once the filling is ready, take the dough from the fridge.
o Roll the dough until it is 0.5 – 1cm thick.
o To create circular disc shapes, use a “medium bowl” (~15cm diameter) as a template/cutter. Trim off
any excess and add to the remaining dough to use for the next pasty.
o Turn the circular dough over to check it keeps its shape. Roll it out a little more to make it a bit
thinner/larger but not by much.
o Add your filling to the centre of dough ensuring there is about 1-2cm free around the edge.
o Brush the edges with a little water.
o Fold the pastry over so that it forms a semi circle with the filling enclosed.
o Crimp the edges down with a fork (or use a fancier folding/twisting technique if you have the
o Move pasty to a baking tray lined with baking paper and cover with egg wash.
Baking the pasty
o Bake in the oven at 180 degrees on the fan setting for 35 minutes.
o Once baked, move to a cooling rack and allow to cool for at least 15 minutes.
