Prep time: Soak for 24 hours. About 15 minutes to prepare other ingredients before baking.
Stove top time: Boil for at least 1 hour before baking.
Cook time: 3 to 4 hours.
Soak beans 24 hours in cold water. Simmer (boil) the beans in the same water until tender, approximately 60 to 90 minutes.
Pour off remaining water. Add the rest of the ingredients except the bacon. Chop the bacon on the long edge into 1/2" strips. Mix half the strips into the beans. Use the other half to cover the top of the bean mixture.
Cover and bake about 3 to 4 hours in preheated 325 degree oven. Uncover after 90 minutes.
(This recipe has been adjusted for elevation by doubling the "sauce" ingredients. The beans and bacon have not been increased.)
