This is the quickest way to whip up a batch of tasty oatmeal cookies!
In a large bowl, combine cake mix, oats and sugar. Combine oil and eggs; add to dry ingredients, stirring well. Stir in pecans and vanilla (plus coconut, if desired). Shape dough into 1 1/2 inch balls and place 2 inches apart on an ungreased baking sheet; flatten balls with the bottom of a glass. Bake 12 minutes at 350 degrees or until lightly browned. Transfer cookies to wire racks to cool.
Notes: This recipe is from Minter Lane friend Pat Phillips, a wonderful cook. The cake mix gives these a wonderful, light texture that is much different than the usual oatmeal cookie, and the recipe makes a large batch. These freeze well.
