Wonderful on toast or on scones
Pick lemons when very ripe from tree. Combine all ingredients except zest in saucepan over medium low heat. Stir constantly, never allow to boil until thickened and you see a tiny bubble or two. Stir in the zest and pour into a jar. Keep refrigerated, lasts about a month. Really good.
