Easy, simple. Slice, spice and grill, basically. Ignore all my instructions. Or not. Really can't mess these kind of things up. Wash and slice veggies as described.
Coat veggies in EVOO (oil).
Sprinkle with S & P. Separate Squash from rest. Sprinkle Parika or other spice of choice that has a bit of kick.
Preheat Grill to 400-500. Place directly on grill.
Grill for 3-5 mins until underneath has nice grill marks. (Due to timing of other courses, the attached picture is a little bit over-grilled in my opinion, but still got great raves. I definitely suggest getting some 'blackened' or chargrilled areas, so reason for grilling at high temp. Your mileage will vary.)
Turn down heat while flipping everything over. Sprinkle Squash with cinnamon and/or brown sugar (if really fresh, sugar is NOT necessary).
I've also done this with a Jamaican Jerk spice, which has a great sweet-bang taste.
