Awesome sauce
In a shallow baking dish large enough to hold the halibut in 1 layer, combine the herbs, garlic and oil. Add the steaks and turn to coat them on both sides with the herbs. Cover and refrigerate 1 hour before cooking.
Preheat the broiler.
While the broiler is heating, make the lemon sauce. In an enamel saucepan, melt 1 Tblsp butter over medium heat. Add the garlic and cook, stirring until golden. Stir in the wine, lemon juice and soy sauce and reduce the liquid by 1/3. Add the remaining 6 Tblsp of butter, 1 piece at a time, quickly whisking until completely incorporated. You want to fully blend each piece, not just melt it, before adding the next. Taste and add salt and pepper. Keep the sauce warm in a warm water bath until ready to ue. Do not reheat over direct heat.
Broil the halibut on a broiling pan on the middle rack of the oven for 6-8 minutes, or until just cooked through and the juices run clear when tested with a fork. (Or use a 475 degree oven for 8-10 minutes with no turning.
Serve the halibut with several tablespoons of the lemon sauce drizzled over the top.
