Preheat oven to 275 degrees.
Line a sheet pan with parchment paper.
Mix sugar and cornstarch together in small bowl. Set aside.
In large glass mixing bowl, whip egg whites, cream of tartar, and salt starting on low speed and increasing speed to medium incrementally until soft peaks form, approximately 2-4 minutes.
Increase speed to medium high and gradually sprinkle in sugar mixture. A few minutes after sugar is whipped in, gradually add vanilla and continue whipping until stiff peaks form, about 4-5 minutes.
Spoon meringue into 8-10 large round mounds that are about 3 inches wide. With a spoon, make an indentation to hold the filling once meringue is done.
Place pan in oven and reduce heat to 250 degrees. Bake for 50-60 minutes until meringues are crisp, dry to touch on the outside, and white, not tan colored or cracked. The interiors should be marshmallow like. If meringues appear to be cooking too fast, reduce temp 25 degrees and turn pan around.
Gently lift from parchment paper and cool on wire rack.
Top with favorite fruit topping and whipped cream.
