Preheat oven to 200oc. Beat egg whites until stiff peaks form. Continue beating and slowly add caster sugar until all dissolved. Add cream of tartar with the last of the sugar. Pile the meringue mixture on a lined baking tray and place on the middle rake of oven. Turn oven down to 150oc and cook for 1 1/2 hours. Leave in oven to cool.
