Easy dessert that will impress a crowd. 6 egg whites are the secret.
Preheat oven to 150 Celsius fan forced. Place egg whites into mixing bowl, add pinch cream of tartar and mix on high speed for several minutes.
Gradually start to add the castor sugar a tablespoon at a time beating between each addition.
Once all sugar is added and mix in glossy and peaks can form. Turn off mixer, sift in cornflour, add vinegar and vanilla essence and either fold in or mix on very low speed until just combined.
Pile onto meringue plate dampened with water, or metal tray covered with baking paper. Pile high as meringue will spread when cooking.
Cook on low heat, 150 degrees Celsius for 55 minutes or until meringue is firm and slightly browned. Leave in oven with door slightly ajar to cool.
Whip cream and pile on top with seasonal fruit.
