Heat oven to 150C
Beat eggwhites until stiff peaks form. Gradually add sugar, beating well, until mixture is soft and glossy. Add cornflour and vinegar and whisk until just combined.
Shape into 18cm round on tray lined with baking paper.
Reduce oven temperature to 120ºC and bake for 1 hour and 20 minutes. Turn oven off and allow pavlova to cool completely in the oven.
Decorate as desired.
