Add oil to large pot and then add leeks, carrots, and celery, Season with s&p
Cook until softened, 10 min?
Add garlic, cook 2 min more
Add dried peas, stir to coat with veget
Add stock, thyme and bay leaf
bring to boil, then lower temp and simmer 1 hour partially covered until peas softened
Remove thyme springs and bay leaf
Let cool and then puree with immersion blender
garnish to serve
