Mini Peach Cobber
Preheat oven to 350
Spray a large muffin tin (6 muffins) with oil
place 1/2 teaspoon of butter at the bottom of each pan.
Mix sugar, flour, baking power, and milk
pour 1/4 cup in each muffin cup
top with 2 tablespoons of diced peaches
Bake 35 min or until crust is golden brown and peaches are bubbly. Cool before removing from tin.
I cut the sugar in half from the original recipe and made large muffins instead of small muffins.
Variation: Pinch of chinese 5 spice in the peaches
Fresh peaches. Add cinnamon and brown sugar to peaches.
