Cobbler is the classic dessert in the South and peaches are omnipresent throughout South Carolina for about four glorious months of the summer. It’s a simple dessert that only gets better when served warm with a scoop of ice cream.

Preheat the oven to 375°F.
In a bowl, toss the peaches with 1/4 cup of the sugar. Set aside for about 15 minutes.
Melt the butter by putting it in a 9-by-9-inch baking pan in the oven for a few minutes. In a bowl, whisk to combine the remaining 1/2 cup sugar, the milk, flour, baking powder, cinnamon, and salt.
Without stirring—Southerners are adamant on that point—pour the batter into the pan, then put the peaches, including any juices, on top. Use a fork to poke the peaches down a bit, until they are nearly submerged. Bake for 50 to 60 minutes, until the cobbler is golden. Let rest for at least 20 minutes before serving with a little warm cream or ice cream.
