A summer breeze in a glass. I make this every summer and save it until late in winter. Add 1 ounce to a glass and add any sparkling wine for a perfect brunch cocktail. Serve it on the rocks with a splash of soda at the end of the day for a relaxing happy hour. This recipe makes a lot, I always gift it in 16 ounce bottles. You can make less, but why?

This project needs 6 weeks AT LEAST between making and then finishing and bottling
I use a one gallons glass jar to make this - NOT plastic. Make sure it has a tight lid
Buy several pint flasks, with flip top caps for transfer once the liquor is made. Amazon has them at a great price
1. Wash peaches to remove any dirt,
2. Cut into quarters, and place into clean gallon jar. Shake jar occasionally to assure the peaches are settling in place.
3. When the jar is full, pour alcohol over peaches.
4. Place a layer of layer of plastic wrap over edge of jar. Cover with lid. You want the tightest seal you can have. To prevent any evaporation.
5. Store in cool dark area of your house for at least 6 weeks.
When you are ready to bottle. Wash the flasks you want to transfer the cordial into.
Make simple syrup-
1. Combine sugar with water and bring to a boil and sugar to dissolve once you get to boil turn flame off and allow to cool completely. Don't over boil
Finishing-
2. Strain alcohol from peaches. Use a tea strainer lined with cheesecloth to prevent cloudiness. ( or don't) Strain into another large vessel. DONT CLEAN the gallon jar.
3. The peaches are pretty bad tasting. But if you like - enjoy them over ice cream. Or throw them away
4. Pour the alcohol back into the gallon jar, pour in elderflower liquor and cool simple syrup. Taste a little- you might want more syrup to make it sweeter.
6. Use long neck funnel placed inside neck of flask to ladle cordial into bottles. Wipe clean - the bottles will be sticky.
7. Seal with lid and store.
Makes about 8 16oz flasks
This can be transferred into any glass jar. But plastic bottles may cause evaporation, and the liquor might absorb other flavors.
You can do this with any summer fruit, use the ripest possible
