A wonderfully refreshing take on salsa with a decidedly sweet/hot touch. Peaches form the base, but otherwise it's a traditional salsa with just enough tomato to feel like home. If you're going to serve immediately, make sure to chill the peaches first. Otherwise best left in fridge overnight.
Peel and cut peaches into 1/2 inch chunks, discard pits and skins. Place in a large glass or high-quality stainless bowl. Squeeze lime juice on peaches, measure and sprinkle cider vinegar, and mix well. (This will ensure the peaches retain their color.) Cut tomatoes into 1/2 inch pieces, finely mince the jalepeno (leaving behind the pith and seeds), add the cilantro, onion, fresh ginger, and garlic. Combine all into the bowl and gently mix, but thoroughly, and chill.
Use jalapeno and garlic to taste. This recipe is safe and "warm". I typically use two jalapenos and six cloves of garlic.
This recipe is best to sit overnight in the refrigerator. If you want to use it immediately, make sure the first chill all the wet ingredients like the peaches and tomatoes.
Great with salads, on tortilla chips, or in tacos.
