A delicious, creamy, peachy oatmeal - soaked 12 hours for maximum digestibility!
To soak oatmeal, put oats and lemon juice in a 1 quart glass mason jar, fill with water, stir, and soak 12-24 hours.
Rinse oats, add to 2 quart saucepan. Add milk and heat til boiling at medium high heat, stirring occasionally. Reduce heat and simmer until oatmeal reaches desired consistency, about 10 minutes.
Add yogurt, peaches, vanilla, and brown sugar. Stir and serve. Leftovers can be refrigerated and reheated the next morning for an even faster breakfast.
You can slice the peaches before adding, but they are so soft after cooking, they can be sliced easily with a spoon while eating. So I don't pre-slice. Because I'm lazy like that.
