Easy, delicious, refreshing summer dessert. Any sparkling wine will do, but a Sparkling Rose is probably best for this dish.
Prepare the dessert 2 hours ahead of time, and save the sparkling wine for the presentation at the table. Garnish with mint.
Make the simple syrup:
In a large saucepan, start with 4 cups of water and 3 cups (yes, 3 cups) of sugar. Bring to a boil, whisking slowly but constantly, until it dissolves. Remove from heat and let cool completely.
Meanwhile, peel peaches and slice in wedges and place them in a large bowl. Top the strawberries and quarter them lengthwise. Squeeze a lemon on the peaches to keep them from browning.
When the simple syrup is cool, pour it on the fruit, and let sit in the fridge for at least 2 hours to cool.
Serve in a crystal glass or martini cup, bring to the table, and top with champagne and mint. Enjoy!
