1. Preheat oven to 400 degrees F. Grease twelve muffin cups; set aside. In medium bowl, stir together cornmeal, flour, sugar, baking powder, 1/2 tsp salt, and apple pie spice; set aside.
2. In a small bowl, whisk together milk, eggs, and melted butter. Stir in peaches. Add peach mixture to flour mixture; stir just until combined. Spoon batter into prepared muffin cups, filling cups two-thirds full.
3. Bake 14-15 minutes or until edges are golden brown. Serve warm. If desired, serve with vegetable oil spread.
Peaches can be frozen or fresh.
