Great all in one casserole
Melt butter in a saucepan. Saute onion and garlic until tender. Blend in flour, salt and bouillon mix. Gradually stir in milk. Cook over medium heat, stirring constantly, until mixture just comes to a boil and thickens. Remove from heat. Add cheese and stir until melted. Stir in spinach. Spoon half of the rice into a greased 2 quart round casserole. Top with half the cheese sauce. Repeat layers. Arrange bacon slices on top.
Bake in preheated 350 degrees for 30-35 minutes or until heated through.
