1.Preheat oven to 375F.
2.Coat a large baking sheet with cooking spray. In a large bowl, place flours, sugar, baking powder, baking soda and salt. Mix well with a fork.
3. In a medium bowl, whisk together eggs, egg whites, oil and milk. Whisk in peanut butter and vanilla. Add egg mixture to dry ingredients and mix with your hands until manageable dough forms.
4. Shape dough into two 10-inch logs. Place logs on prepared baking sheet, as far apart as possible. Using your hands, flatten each log slightly, then bake 25 minutes. Transfer to wire racks to cool.
5. Reduce oven temperature to 350F. When logs are cool enough to handle, cut each crosswise, on a slight diagonal, into 1/4-inch thick slices. Arrange slices flat on a baking sheet, return to oven and bake 10 minutes. Turn slices over and bake 5-10 minutes more,until golden brown. Cool on wire racks until crisp.
