Start by buttering a baking sheet with 1 1/2 teaspoons of butter and butter a spoon or spatula while your at it. You will also want yo set aside the butter, vanilla, and baking soda for later. In a large sauce pan mix the sugar, water, and light corn syrup. Cook over medium heat until the candy thermometer reads 270 degrees = soft crack stage. Make sure to stir occasionally. Once the mixture reaches 270 degrees add 1 10 ounce can of mixed nuts(or your choice of nut.) stir until the thermometer reads 300 degrees = hard crack stage. Once the mixture reaches 300 degrees remove from hear and add the butter, vanilla, and baking soda that you set aside earlier. Stir like crazy! HURRY! You need to get these ingredients mixed together well before the mixture starts to cool. Pour the mixture into the buttered baking sheet and use your buttered utensil to spread the mixture so it has an even thickness throughout the sheet. The sheet will get very hot from the mixture so be sure to keep the pan in a safe place to cool so that no one or anything gets burnt! After the mixture has hardened and cooled you can crack it into pieces and enjoy! I like to crack it when it's still a little warm and have a piece! :)
