Mix wet ingredients then add dry ingredients ending with the flour. You may need less than 2 1/4 cups of flour. Add the flour until the dough can be rolled into balls and is just slightly sticky.
Roll into 1 1/2 inch balls and place on cookie sheet. Using a fork press balls into a flat cookie using a cross pattern.
Bake at 350 degrees for 12 min.
