Use crunchy peanut butter for these cookies.
Cream butter with brown sugar. Add peanut butter and beat until combined. Mix in egg and vanilla and beat until light and fluffy. In another bowl whisk together baking soda, salt and flour. Add to peanut butter mixture and mix until a stiff dough forms. Shape into balls and press onto parchment lined baking sheets. Crisscross, pressing with a fork. Bake in a 375 degree oven until edges are lightly browned, about 10 minutes.
