Mix together the first 4 ingredients thoroughly. Stir in the well-beaten egg. Sift together and stir in the sifted flour, baking powder, baking soda, and salt.
Chill dough. Roll into balls the size of large walnuts. Place 3" apart on a lightly greased baking sheet. Flatten with a fork dipped in flour-crisscross. Bake until set, but not hard.
Bake 375 degrees for 10-12 minutes.
