Tasty cake filling
Let Cream Cheese come to room temperature.
Using a chilled bowl, whip the cream and vanilla until it is light and fluffy. Don't make butter!
In a separate bowl, whip the peanut butter and cream cheese until well combined. Add sugar and mix on low speed until completely blended.
Gently fold half the whipped cream into the PNB mixture. When it looks almost combined, fold in the other half of the whipped cream. The goal is to combine without deflating the whipped cream.
Cover with plastic wrap and chill for at least 2 hours, or overnight.
