Wow! These are delicious! They taste like gooey brownies with the nice surprise of peanut butter.
Preheat oven to 350F. Line baking pan with parchment paper.
Over a simmering pot of 1 inch of water, place a bowl with the butter and chocolate chips. Stir until melted.
In separate bowl, beat eggs, cocoa, & sugar for 3 minutes. Combine two mixtures.
Add vanilla, salt, baking powder, & flour until just combined. Fold in chocolate chips.
Using a small cookie dough ice cream scoop (about 1 tablespoon), scoop onto parchment paper. HINT: It is easier when you refrigerate the dough between batches.
Bake 10 minutes, until cookie is just firm. Let cool in tray for 5 minutes and then move to wire rack to cool completely.
Frost with one cookie frosting and sandwich two cookies together. Store in covered container. Freezes well.
Frosting:
Beat peanut butter, icing sugar, butter, vanilla, & salt for 5 minutes. Add cream and whip for 2 minutes, until frosting is light & fluffy.
