Preheat oven to 350 degrees. In a large bowl, combine butters, sugars, egg and vanilla. Stir in flour, baking soda and salt until blended. Roll dough into 1-inch balls. Set in 1 1/2-inch muffin tins. Bake 10 minutes. Remove from oven and immediately press one peanut butter cup into each cookie. Allow to cool before removing.
