Suggest a better descriptionPreheat oven to 400 F. In top of doulbe boiler over hot ( not boiling) water, melt 1 1/2 cups peanut butter morsels, set aside. In small bowl, combine flour, salt and baking soda, set aside. In large mixing bowl, combine butter, brown sugar, granulated sugar, egg and vanilla, beat at medium speed of electric mixer until creamy. Blend in melted peanut butter morsels. Gradually add flour mixture. Using rounded teaspoonsfuls, shape into 1 inch balls. Place 2 inches apart on ungreased cookie sheet. Make thumbprint in center of each cookie. Fill each cookie with 1/4 teaspoonful of Peanut Butter Filling( recipe follows)Bake 5-7 minutes. Cool 2 minutes, remove from cookie sheet and cool completely on wire rack. In small bowl, combine coconut, honey, water and cinnamon, mix well. Stir in remaining 1/2 cup unmelted peanut butter morsels. Put inside thumbprint. Makes about 5 dozen.
