Fun peanut sauce dish. (If you have leftover sauce, drizzle on vanilla ice cream.)
1. Cut chicken into bite-sized pieces. Soak chicken in soy and garlic while you make the sauce.
2. Make sauce (peanut butter, soy sauce, honey, Sriracha, a little bit of oil & water) in a small bowl, then set aside.
3. Heat 2 T. oil, cook chicken over medium heat in a large saucepan.
4. Remove cooked chicken, add leeks to the saucepan. Cook for one minute.
5. Deglaze leeks with chicken broth, then add veggies and simmer (covered) for 5-10 minutes.
6. Start the noodles in a separate pot.
7. Lower the heat on veggie saucepan, finally add the sauce. Simmer for 1 minute, stirring.
8. Add meat back into the saucepan, stir.
9. Drain noodles, then everything is stirred in the noodle pot.
Feel free to taste the sauce as you make it...it'll mellow a little bit when mixed in. It should have elements of spicy, sweet, and salty.
