Quick and easy pan-fried haddock with a crunchy toasted crust.
Get frying pan hot with at least medium heat.
In a bowl, lightly crush peanuts and cashews.
Add minced garlic, chili flakes, salt, coriander, and combine thoroughly.
In a separate bowl, beat an egg with a splash of fish sauce.
Coat haddock in egg mixture then in nut mixture.
Add a couple tablespoons of olive oil to hot pan.
As oil just begins to smoke add haddock.
Cook on one side until the nuts are well toasted.
Flip and cook other side while basting with the hot oil.
Remove pan from heat and finished with freshly squeezed lime juice.
Serve with fragrant rice and/or sautéed broccoli.
This is a slight variation to Gordon Ramsay's recipe for fried red mullet fish, so most of the credit goes to him.
