Suggest a better descriptionLine a cookie sheet with foil, and butterit generously. Set aside. Have everything measured and ready before starting. Chop the chocolate into 1-inch pieces. Put egg whites into a mixing bowl within reach, ready to turn mixer on. Chop the peanuts.
Place coen syrup, sugar and water in a heavy 4-quart saucepan over medium heat. Stir constantly with a wooden spoon. Place candy thermometer into the saucepan and heat to 225°. When mixture reaches 225°, turn mixer on and beat the egg whites until stiff. When mixture reaches 240°, using a metal measuring cup, remove 3/4 cup of the hot mixture. Continue mixing on low while you cook the remaining sugar mixture to 275°.
Turn the mixer ro medium, and slowly and in a thin stream, add the rest of the syrup. When mixed thoroughly, turn mixer off and stir in chocolate and vanilla with a wooden spoon until chocolate is melted.
Roll into logs, 3/4 x 1 1/2 inches, place on foil-lined cookie sheet, and place in freezer for 2 hours or until frozen. Meanwhile, prepare caramel as follows.
3/4 cup butter
2 cups brown sugar, firmly packed
pinch of salt
3/4 cup light corn syrup
1 14-ounce can sweetened condensed milk
1/2 teaspoon vanilla
Line a 9-inch square pan with foil and butter it generously. Set aside.
In a heavy 4-quart saucepan, melt the butter over medium heat. Using a wooden spoon, stir in sugar and corn syrup until dissolved. Then, add the sweetened condensed milk. Place a candy thermometer into the saucepan and stirring constantly, heat to 243°.
Remove from heat. Stir in vanilla. Pour inro top of double boiler and place over bottom, which has been filled with very hot water.
Drop frozen nougat logs into melted caramel on at a time, and remove with a dipping fork. Roll logs into peanuts to cover. Retuen to prepared cookie sheet to set up.
Store wrapped in plastic wrap.
Yield: 30 bars
