Preheat the oven to 200 F. Line a rimmed baking sheet with a silicone baking mat or parchment paper.
Using a mandoline or very sharp knife, cut the pears lengthwise into very thin slices; don't remove the seeds or cores. Put the sugar on a plate, then dip the pear slices in the sugar, turning to coat both sides. Transfer to the prepared baking sheet, arranging them in a single layer.
Bake for about 1 hour, until the edges of the pears begin to curl. Turn the slices over and bake for another 1 hour or so, until golden brown. Transfer the pears to a wire rack. Cool before serving.
