Suggest a better descriptionIn a medium saucepan, melt butter over low heat. Add onion and lemon zest. Cook gently, stirring occasionally, until onion is soft but not browned, about 4 minutes. Add peas, and stir to combine thoroughly. Season with salt and pepper. Cook, stirring, about 5 minutes or until peas are heated through. Stir in mint and serve immediately.
