350f oven
spray or oil three 9" cake pans
Grate carrots with food processor, measure out 4c
plump up raising by adding bourbon and microwaving for 90 sec, stirring partway through - bourbon should just start to boil. set aside and stir occasionally
chop nuts and toast in oven for ~6mins, stirring once
place flour in lg bowl, sprinkle and blend in dry ingreds, make a well in the centre
combine oil, sugar, eggs, vanilla in med bowl and beat 3 mins. scrape into well and stir with scraper until just even in color. stir in carrots, raisins/bourbon, sprinke in nuts and just mix in. very thick
divide batter among 3 pans (2 1/4c ea), spread to pan sides, bang on counter 6x to remove air pockets
bake until centres seem set, 30-35min. cool on baking rack for 15 mins, then turn out and cool on racks. leave at room temp overnight before icing if possible
for icing:
cut cream cheese in chunks. beat butter with mixer until very creamy, add bourbon and vanilla, reduce speed to low and add in cream cheese one chunk at a time. add about 1/3 of icing sugar, beat thoroughly, scrape down sides, repeat. fridge about an hour before using
place cake top-side down on platter. lay the other 2 top-side up on waxed paper (brush with bourbon!). spread frosting on each, leaving a narrow border of cake around edge of cake on platter and on one other cake. spread to edge on 3rd cake (top layer). garnish with pecan halves, best to refrigerate several hours or overnight before serving
