These are elegant and delicious cookies. Great to serve with ice cream for a simple dessert.
Line 2 baking sheets with parchment paper. Stir butter, sugar and corn syrup in heavy saucepan over low heat until melted and smooth. Bring to boil stirring constantly. Remove from heat, stir in vanilla, flour and nuts. Drop by teaspoons onto sheets. Bake until bubbling and lightly browned - about 11 minutes. Cool on sheets, then on rack.
