In a large saucepan, bring 3 3/4 cups water and salt to a boil. Stir in oats and half of bananas, reduce the heat to low to maintain a low simmer, and cook for 3 minutes, incovered, stirring occasionally.
When water has been absorbed and oats are thick, remove from heat and stir in remaining bananas, cinnamon, vanilla and stevia. Serve topped with pecans and maple syrup, dividing both evenly. If desired, sprinkle lightly with additional cinnamon.
