1. Preheat Oven to 350 degrees.
2. Combine wafer crumbs and brown sugar. Stir in melted butter. Press into bottom and up sides of springform pan.
3. Bake for 6 minutes and set aside to cool.
Pecan Crust Filling
1. Combine all ingredients in a medium sauce pan and bring to a boil over medium high heat.
2. Reduce heat and and simmer until thickened, about 8 to 10 minutes, stirring constantly.
3. Pour into crust and set aside to cool.
Pumpkin Cheesecake
1. Place a 2 qt saucepan on stove top and over medium heat bring to a boil.
2. In a large mixing bowl add cream cheese, and sugar and beat with an electric mixer until light and fluffy, about 2 to 3 minutes.
3. Add the pumpkin and beat until incorporated fully.
4. Beat in eggs, one at a time, scraping bowl after each addition.
5. Add all spices and vanilla extract and beat until blended. Add flour and beat until incorporated.
6. Wrap the sides and bottom of the springform pan with heavy duty aluminium foil, and pour the filling into the pan.
7, Place the foil wrapped springform pan into a small roasting pan and pour the hot water into the roasting pan surrounding the springform
pan about 1 1/2 inches up the sides.
8. Place in oven and bake until the center of cheesecake jiggles slightly when the pan is gently shaken, about 1 hour and 20 minutes, to 1
hour and 30 minutes.
9. Remove cheesecake from water bath and place on a wire rack to cool.
10. Once cooled use a pairing knife to loosen the sides of the pan.
11. Chill for at least 4 hours before serving.
