A simple way to prepare this Southern favorite!
1. Rinse and drain the peas. Bring enough water to cover the peas to a boil in a medium sauce pan. Add the bacon fat and peas to the boiling water. Return to boil, skim off the foam and reduce heat to a lively simmer. Cook uncovered until tender, about 30 minutes.
2. Drain peas in a colander and pour into serving dish. Add butter and serve immediately.
