Suggest a better descriptionCombine all the ingredients except the pork in a large bowl. Add 1kg boneless pork belly ribs, toss to coat and leave to marinate in the fridge for 10 minutes. Preheat the oven to 160C/Gas mark 2-3. Line a deep roasting tray with foil, place a rack over the top and add 1cm water to the base of a tray. Place the pork on the rack and roast for 1 hour, brushing with marinade every 15 minutes. Turn the ribs over halfway through the cooking time. Lift the ribs onto a board and chop into pieces to serve. Garnish with coriander, spring onions and chillies and accompany with lime wedges.
