Penne with a creamy tomato sauce and vegetables
1. Boil yam 20 minutes
2. Saute broccoli, onion, mushrooms, and bell pepper
3. Cook pasta according to instructions
4. Blend tomatoes, dates and yam
5. Fold spices into blended mixture
6. Pour mixture into veggie mixture and simmer
7. Once cooked, mix sauce with pasta
8. Serve with fresh arugula, and nutritional yeast as toppings
