A Light, but delicious, Dish
1. In large non-stick skillet, over medium heat, saute turkey sausage and eggplant 12 to 15 minutes or until sausage is no longer pink and eggplant is soft and lightly browned. Add spaghetti sauce to turkey mixture and simmer 3 minutes or until heated throughout.
2. To serve, spoon sauce over drained penne and top with cheese.
