In a large skillet, cook the onion, pepper and garlic in butter over medium heat, stirring, until the veggies are softened.
Stir in the pumpkin, broth, water, and cream. Season with salt and pepper to taste. Simmer, stirring occasionally, for 15-20 minutes.
Meanwhile, cook the pasta until al dente. Ladle out and reserve 1 cup of the cooking water. Drain the pasta and add to the cooked sauce.
Cook over medium heat, stirring and thinning as desired with the reserved cooking water for 1-2 minutes until all is well coated. Stir in the parsley.
Serve with parmesan. Serves 4.
