heat oven to 400F
Toss onions, peppers and garlic with a little EVO to coat. Spread on a cookie sheet and roast 15 min. Remove garlic,mc hop coarsely, and return to vegetables. Stir and roast 10 to 15 min. More until softened. Set aside
Toss tomatoes with a little EVO. Place tomato halves cut side up on a cookie sheet. Roast for 15 minutes, turn cut side down and roast 10 to 15 minutes more. Lift skin from tomatoes, discard. Chop tomatoes coarsely, blending any juices from the cookie sheet. Set aside.
In a large fry pan heat 2 tbs. of EVO. ADD THE ROASTED VEGETABLES. STIR TO BLEND WELL. ADD THE REST OF THE INGREDIENTS AND SIMMER UNCOVERED on low heat for 10 to 15 minutes until thickened to spreading consistency. Cool.
Refrigerate for several days or freeze.
