3/4 cup sugar (or 1/2 cup stevia; 1/4 cup sugar)
1/2 cup butter, softened
1 egg
1/2 tsp vanilla extract
1/8 tsp mint extract (or less, optional)
1-2/3 cups all-purpose flour
1 tsp cream of tartar
1/2 tsp baking soda
1/2 tsp salt
1/2 cup peppermint candy
1/4 cup sugar (for coating - optional)
Preheat oven to 350 degrees. Line cookie sheets with parchment paper. Combine 3/4 cup sugar, butter, egg, vanilla and mint extract in large bowl. Beat until creamy.
Add flour, cream of tartar, baking soda and salt and mix well.
Stir in crushed candy into dough.
If coating the cookie, mix 1/4 cup sugar and 1/4 cup candy into separate bowl.
Shape dough into 3/4-inch balls; roll in sugar/candy mixture to coat. Place two inches apart on prepared cookie sheets.
Bake 8-10 minutes, or until edges are lightly browned. Cool one minute before moving to wire rack to cool.
