A very quick easy custard to make, just about serves 4, double up if like me you love your custard.
Measure milk into jug. In a small bowl mix tog the sugar or choice of sweetener with the cornflour and some of the milk to make a smooth milk like paste. Warm the milk and add the paste, stir well to combine and slowly bring to the boil, stirring all the time. As the mixture thickens add a few drops of the peppermint extract to taste (a little goes along way) then add either green or pink depending on which colour you prefer.
Do not leave the pan whilst cooking or you will have lumpy custard!
