Lava cakes, also known as molten chocolate cakes, are individual-sized desserts with a surprise inside. They are baked in 1-cup ramekins until the edges are just set. For serving, the cakes are turned upside down onto a plate and the ramekin is removed. The moment your fork breaks open the outer crust to take that first bite, ooey gooey molten chocolate “lava” pours from the inside of the cake.
This dish never fails to impress, and no one has to know how easy they are to make! This version calls for a scoop of ice cream and a garnish of crushed peppermint candies. You can feel free to experiment with your own favorite flavor combinations!
Pre-heat oven 425°F. Butter 4 (6-ounce) custard cups; set on a baking sheet. Microwave chocolate and butter in a microwave safe bowl for 1-1/2 to 2 minutes, stirring every 30 seconds, until melted and smooth. (This can also be done in a double boiler.) Stir in peppermint oil, sugar and salt. Whisk in eggs and then flour.
Spoon batter into prepared cups. Bake 15 minutes or until sides are firm but centers are soft. Remove from oven; let stand 1 minute. Run a knife around rim of custard cups to loosen. Invert onto individual serving plates. Dust with candy. Spoon softened ice cream around cakes. Garnish with fresh mint.
Helpful Tips:
The batter can be prepared one day ahead, poured into prepared cups, covered and stored in the fridge until ready to bake. Softened to melted ice cream makes a quick and easy sauce kind of like a creme anglaise.
